I cavatelli allo scoglio: un primo piatto di mare dal sapore intenso

I cavatelli, pasta tipica del Sud

I cavatelli sono una pasta fresca tipica della tradizione culinaria del Sud Italia, diffuse soprattutto in Puglia, Basilicata e Molise. Hanno una forma ricurva, quasi di piccoli gnocchetti, che ben si presta a raccogliere il condimento.

La ricetta tradizionale prevede che questa pasta venga fatta “nuotare” in un sugo a base di pomodorini freschi, nel quale vengono tuffate cozze, vongole e gli altri migliori frutti di mare.

Un tripudio di sapori di mare

Il risultato di questa combinazione è una vera sinfonia di consistenze e sapori di mare: la morbidezza della pasta si sposa alla perfezione con la freschezza delle vongole, la delicatezza delle cozze, la succulenza dei gamberi. Il tutto reso ancora più invitante dal profumo del pomodorino fresco.

Ogni forchettata regala una nuova esplosione di profumi e sapori. L’importante, come in ogni piatto a base di pesce, è la freschezza degli ingredienti, che devono essere di prima qualità e appena raccolti.

La pasta fatta a mano

La loro ricetta prevede l’utilizzo di cavatelli fatti a mano, conditi con vongole veraci, cozze e gamberi rosa locali, bagnati in un sugo di pomodorino Datterino. Il tocco speciale è dato dall’aggiunta di fumetto di pesce per esaltare la sapidità e dal finale con un filo d’olio EVO e prezzemolo. Un vero trionfo per gli amanti del pesce!
